Double Smoked Burger

 

Prep Time: 15 minutes         Total Time: 30 minutes         Serves: 4

 

1 1/2 lb                 ground sirloin

1 tsp                     salt

1/2 tsp                  freshly ground pepper

4 slices                 smoked Gouda cheese

1/4 cup                 roasted garlic mayo

4                          Jessica’s Brick Oven Gourmet Brioche Sandwich Rolls

1 cup                    arugula leaves

1/2                       small red onion, sliced into rings

4 slices                 tomato

8 slices                 cooked bacon

 

 

Preheat the grill to medium-high heat; grease the grate well. Form the ground sirloin into four 5-inch patties. Season all over with salt and pepper.

 

Grill for 10 minutes or until cooked through. Top each patty with a slice of cheese. Cook for 1 minute or until melted.

 

Spread some mayonnaise on the bottom half of each roll. Top with arugula, red onion, tomato, bacon and a cooked patty.

 

Tip: Toast the rolls on the grill during the last minute of cooking, if desired.

 

 

East Coast Lobster Rolls

 

Prep Time: 15 minutes         Total Time: 1 hour         Serves: 4

 

1/2 cup                 mayonnaise

1 tsp                     lemon juice

1 tsp                     Dijon mustard

1/2 tsp                  finely grated lemon zest

1/4 tsp                  each salt and freshly ground pepper

1/4 tsp                  hot sauce

3 cups                  chopped lobster meat, about 6 small tails

1/2 cup                 finely chopped celery

1/4 cup                 finely chopped red onion

4                          Boston lettuce leaves

2 tbsp                  finely chopped chives

 

Stir the mayonnaise with the lemon juice, Dijon, lemon zest, salt, pepper and hot sauce. Add the lobster, celery and red onion. Chill for at least 1 hour or up to 6 hours.

 

Line the inside of each roll with a lettuce leaf and top with lobster salad. Sprinkle with chives.

 

Tip: Shrimp or crab would also make a delicious filling for these sandwiches.

 

 

Mango Salsa Hot Dog

 

Prep Time: 15 minutes         Total Time: 30 minutes         Serves: 4

 

1                      ripe avocado, pitted, peeled and chopped

1/2                   ripe mango, peeled and chopped

1/2 cup             chopped red pepper

1/4 cup             finely chopped green onion

1/4 cup             chopped fresh cilantro

1                      jalapenos, seeded and diced

1 tbsp               lime juice

1/2 tsp              salt

4                      Jessica’s Brick Oven Gourmet Brioche Hot Dog Rolls

4                      large all beef hot dogs

 

Preheat the grill to medium-high heat; grease the grate well. Stir the avocado with the mango, red pepper, green onion, cilantro, jalapeno, lime juice and salt. Adjust salt to taste.

 

Grill the hot dogs, turning as needed, for 10 minutes or until well-marked and heated through. Serve hot dogs in rolls topped with salsa.

 

Tip: Increase the hot sauce and use 2 jalapenos for a spicy salsa.
